Custom Beef Processing
After the beef is harvested, it is then hung in an aging cooler. It is monitored until the beef is ready to process. The beef is then processed according to the customer’s specifications, approximately 14 days after harvest. All the cuts are then vacuum packed to preserve freshness for a minimum of 5 years. The trimmings that remain will be deboned and double ground into your burger or sausage products. The beef is then placed into a sharp freezer until pickup.
